Beef and Broccoli

One of the cuts of meat I like using the most is flank steak. It’s versatile, tasty, and relatively inexpensive. I’ve used it in dishes like Slow Cooker Ropa Vieja and Beef Stir Fry. No surprise it’s what I turn to for this simple, Asian-inspired dish, Beef and Broccoli.

The only thing with flank steak is that it is tough, and you need to either tenderize it by using a meat mallet or by marinating it. For beef and broccoli, I simply marinade it in a store-bought teriyaki marinade overnight, and then we’re ready to go the next day.

The part of “cooking” that will take the longest is preparing the sauce that you’ll coat the meat at the end. Start with that. Just mix in some classic Asian-inspired ingredients like sesame oil, soy sauce, rice vinegar, and ground ginger (to name a few). Then set aside.

Slice up the flank steak into little strips.

Heat a skillet or wok to medium heat and add a little high-heat oil, like canola or grape seed (I used grape seed.)  Brown the meat for about five minutes, and turn to brown the other side.

When meat is done (typically no more than ten minutes cooking), add the broccoli and the sauce that you set aside, and cook until the broccoli is slightly tender.

You’re done! In about 10 minutes cooking time you’ll have a hot, flavorful dish.

Serve over white or brown rice. This is hearty enough for a one-bowl dinner.

Ingredients

  • SAUCE
  • 2/3 cup chicken stock
  • 1/2 cup reduced-sodium soy sauce
  • 1/4 cup honey
  • 2 tbsp rice vinegar
  • 2 tbsp brown sugar packed
  • 3 cloves garlic minced
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 1 tsp Sriracha or to taste
  • 1 tsp ground ginger
  • 1/4 tsp red pepper flakes
  • BEEF
  • 2 cups store-bought or home made teriyaki sauce
  • 1 lb flank steak thinly sliced across the grain
  • 1 tbsp grape seed oil or other high heat oil
  • 1 head broccoli cut into florets

Instructions

  • Marinade the meat in the teriyaki sauce the night before (or at the very least, two hours).
  • When ready to make, prepare the sauce first. In a medium bowl, combine all the sauce ingredients with a whisk until well mixed, and set aside.
  • Heat grape seed oil in a large skillet or wok, over medium heat. Add meat and cook, flipping once until browned, about five minutes.
  • Stir in broccoli and sauce mix until tender and slightly thicken, about 5 minutes.
  • Serve immediately over steamed white or brown rice.
