Chimichurri Sauce

Chimichurri Sauce is a flavorful pesto-like sauce made from fresh herbs--Italian parsley and cilantro--and a healthy amount of garlic and extra virgin olive oil with a drizzle of lime juice.

Ingredients

  • 1 bunch Italian flat-leaf parsley (about 1 cup)
  • 1 bunch cilantro (about 1 cup)
  • 4 cloves garlic sliced
  • 1 shallot sliced (about 1/2 cup)
  • 2 teaspoons dried oregano
  • 1 tablespoon crushed red pepper flakes
  • 1 generous portion of tablespoon Kosher salt
  • 1 cup extra virgin olive oil
  • 1/2 cup red wine vinegar
  • 1/2 cup freshly squeezed lime juice (about three limes)

Instructions

  • Mix all wet ingredients in a bowl and set aside.
  • Mix all herbs, bulbs, and spices together in a food processor until roughly chopped.
  • As you are pulsing the food processor, start to drizzle in the wet ingredients from the bowl.
  • Let sit in the refrigerator for at least one hour before serving.
