Chimichurri Sauce
Chimichurri Sauce is a flavorful pesto-like sauce made from fresh herbs--Italian parsley and cilantro--and a healthy amount of garlic and extra virgin olive oil with a drizzle of lime juice.

- 1 bunch Italian flat-leaf parsley (about 1 cup)
- 1 bunch cilantro (about 1 cup)
- 4 cloves garlic sliced
- 1 shallot sliced (about 1/2 cup)
- 2 teaspoons dried oregano
- 1 tablespoon crushed red pepper flakes
- 1 generous portion of tablespoon Kosher salt
- 1 cup extra virgin olive oil
- 1/2 cup red wine vinegar
- 1/2 cup freshly squeezed lime juice (about three limes)
Mix all wet ingredients in a bowl and set aside.
Mix all herbs, bulbs, and spices together in a food processor until roughly chopped.
As you are pulsing the food processor, start to drizzle in the wet ingredients from the bowl.
Let sit in the refrigerator for at least one hour before serving.
