Sticky Garlic Chicken
Chicken bites are baked to crispy perfection, then glazed with a honey-garlic sauce to create sticky garlic chicken bites. Perfect over a bed of rice or vegetables.

- 4 large chicken breasts about 1 lb
- 2 large eggs
- 1 cup panko breadcrumbs
- 1/8 tsp each: salt and pepper to taste
- 2 cups white or basmati rice
- 3 1/2 cup water
Sauce
- 1/2 cup soy sauce
- 1/2 cup honey
- 6 cloves garlic minced
- 1/2 tbsp ginger minced
- 1/4 cup sriracha sauce
Garnish
- 4 tbsp sesame seeds
- 3 green onions sliced thinly across
Preheat oven to 400 degrees.
Mix egg together and place in a breading and dredging tray.
Place breadcrumbs on another tray.
Cut chicken breast into bite-sized pieces and dredge, first through the egg, then the breadcrumbs.
Place on a cookie sheet that is lined with parchment sheet paper.
Bake for 25-20 minutes.
Meanwhile, rinse rice in a hand sieve until the water runs clear. Place in a rice cooker with water and turn on.
Make the sauce. In a bowl, combine all the sauce ingredients together in a skillet and simmer over medium heat until slightly reduced and thickened.
Add the chicken when finished baking and stir to coat.
Serve over hot rice or stir fried veggies, and garnished with sesame seeds and sliced green onion.
