Banana Nut Bread

A sweetened bread flavored with bananas and buttermilk. Studded with walnuts for a moist treat to enjoy anytime.

Equipment

  • (2) 9x5x3 loaf pans

Ingredients

  • 1 cup two sticks butter
  • 1 1/2 cups granulated white sugar
  • 4 ripe, browned bananas
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 4 cups all-purpose unbleached flour
  • 2 teaspoons baking soda
  • 2 tablespoon cinnamon
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 1/2 cup chopped walnuts optional

Instructions

  • Preheat oven to 325 degrees Fahrenheit.
  • In a large bowl, cream butter and sugar thoroughly.
  • Blend in bananas, then eggs, and then vanilla.
  • In a separate bowl, mix the flour, baking soda, cinnamon, and salt together.
  • Add the flour mixture to the banana mixture a little at a time, alternating with the buttermilk. Mix throughly together.
  • If making with walnuts, add them now.
  • Spray two 9x5x3 loaf pans with cooking spray.
  • Pour batter into loaf pans and bake for 1 hour and 30 minutes, or until done. (Use toothpick to test for doneness.)

Notes

Instead of mixing nuts in the batter, if I use them, I sprinkle about a handful of chopped walnuts on top. I don't like super sweet bread, so I use a little less sugar (only 1.5 cups) and instead, make sure that the bananas are very, very brown.
