Banana Nut Bread
A sweetened bread flavored with bananas and buttermilk. Studded with walnuts for a moist treat to enjoy anytime.

Ingredients

cup
two sticks butter
1 1/2
cups
granulated white sugar
4
ripe, browned bananas
4
large
eggs
2
teaspoons
vanilla extract
4
cups
all-purpose unbleached flour
2
teaspoons
baking soda
2
tablespoon
cinnamon
1
teaspoon
salt
1
cup
buttermilk
1 1/2
cup
chopped walnuts
optional
Instructions
Preheat oven to 325 degrees Fahrenheit.
In a large bowl, cream butter and sugar thoroughly.
Blend in bananas, then eggs, and then vanilla.
In a separate bowl, mix the flour, baking soda, cinnamon, and salt together.
Add the flour mixture to the banana mixture a little at a time, alternating with the buttermilk. Mix throughly together.
If making with walnuts, add them now.
Spray two 9x5x3 loaf pans with cooking spray.
Pour batter into loaf pans and bake for 1 hour and 30 minutes, or until done. (Use toothpick to test for doneness.)

Notes
Instead of mixing nuts in the batter, if I use them, I sprinkle about a handful of chopped walnuts on top. I don't like super sweet bread, so I use a little less sugar (only 1.5 cups) and instead, make sure that the bananas are very, very brown.
