Basic Marinara Sauce

A basic tomato sauce that is simmered with onions, garlic, Italian spices, and a bit of wine, then combined with basil and parmesan cheese and slow simmered until thick and flavorful.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 cup yellow onion, chopped
  • 3 cloves garlic, minced
  • 1/3 cup dry white wine such as pinot grigio or sauvignon blanc
  • 28 ounce can crushed tomatoes
  • 1/2 cup basil leaves, shredded
  • 1/2 cup grated Parmesan, or to taste
  • 1 tablespoon capers, or to preference
  • 2 teaspoon sugar
  • 1 tablespoon dried oregano
  • kosher salt and pepper to taste

Instructions

  • Heat oil in a skillet over medium heat. Add onions and cook until translucent, about five minutes.
  • Add garlic and cook about three minutes more.
  • Increase heat to high and add wine to deglaze.
  • When wine has reduced, add the tomatoes, basil, sugar, and oregano. Then add salt, pepper, and capers to taste.
  • Grate some fresh parmesan cheese over and serve.
