Basic Marinara Sauce
A basic tomato sauce that is simmered with onions, garlic, Italian spices, and a bit of wine, then combined with basil and parmesan cheese and slow simmered until thick and flavorful.

- 1 tablespoon extra virgin olive oil
- 1 cup yellow onion, chopped
- 3 cloves garlic, minced
- 1/3 cup dry white wine such as pinot grigio or sauvignon blanc
- 28 ounce can crushed tomatoes
- 1/2 cup basil leaves, shredded
- 1/2 cup grated Parmesan, or to taste
- 1 tablespoon capers, or to preference
- 2 teaspoon sugar
- 1 tablespoon dried oregano
- kosher salt and pepper to taste
Heat oil in a skillet over medium heat. Add onions and cook until translucent, about five minutes.
Add garlic and cook about three minutes more.
Increase heat to high and add wine to deglaze.
When wine has reduced, add the tomatoes, basil, sugar, and oregano. Then add salt, pepper, and capers to taste.
Grate some fresh parmesan cheese over and serve.
