Buñelos
Flour tortillas are deep fried, then dredged in cinnamon sugar, making for a crispy treat that is perfect by itself, or crumbled on top of ice cream.

- 10 flour tortillas
- 1 cup vegetable oil
- 1/8 cup cinnamon
- 1 cup sugar
Mix cinnamon and sugar on a small plate and set aside. Adjust the ratio to your liking.
In a skillet over medium-high heat, pour oil and heat up.
Place one each tortilla carefully in the hot oil. When the tortilla has crisped up after a few minutes, use the tongs to flip it to the other side. The more you fry, the crispier the buñuelo will become.
When the buñuelo is fried to your liking, pick it, letting the extra oil drop off in the pan, and then place on paper towels to remove the excess oil.
Quickly dredge in cinnamon-sugar blend to coat.
Serve whole or break apart and serve as wafers over ice cream.
