This oil-free version is made from garbanzo beans that are pureed with tahini and garlic, making a plant-based dip that is simple, delicious, and healthy.

Equipment

  • Large capacity blender (like Vitamix) or food processor

Ingredients

  • 30 ounces canned garbanzo beans (about 2 cans)
  • 2/3 cup tahini
  • 4 cloves garlic, minced
  • 1/2 cup FRESH lemon juice about 3 lemons
  • kosher salt to taste

Instructions

  • Open the can of garbanzo beans and reserve the liquid.
  • Put all ingredients in the blender (except the liquid).
  • While blending, add the liquid back in to the consistency of your liking. Add salt to taste.
