Mexican Tea Cookies
These cookies are made of butter, walnuts and vanilla extract then baked and coated in powdered sugar. A classic tea cookie that is perfectly sweet and buttery.

- 1 cup unsalted butter
- 1/2 cup powdered sugar plus more for coating the top
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose unbleached flour
- 1/4 teaspoon kosher salt
- 2/4 cup walnuts finely chopped
Mix butter, powdered sugar, and vanilla thoroughly.
Stir flour and salt together; blend into butter mixture.
Mix in nuts.
Chill dough for at least two hours or overnight.
When ready to bake, heat oven to 400 degrees Fahrenheit.
Roll dough into one-inch balls. Place on ungreased baking sheet.
Bake 10 to 12 minutes or until set, but not brown.
While still warm, roll in powdered sugar. Cool. Roll in sugar again.
